Vegetable pasta

Hey everyone!

I thought it was time to post my first recipe! This was one was really yummy and like most of my things it was made with WHATEVER WAS IN THE FRIDGE/PANTRY  To my surprise it made a really yummy dinner.

Now I made this a few weeks ago, and I don't remember how much of each item I included.  I like Bethenny Frankel, agree that you should just use whatever you have, if you don't have a certain item it's no big deal, just mix and match, if you like more of one ingredient - use that! If you don't like another, don't use it and replace it with something you do like. There are no rules! I also fully believe in having fun and just going with the flow when cooking, that's my style and that works for me.

On to the recipe though....


Vegetable Pasta


Ingredients:
1 x Onion - chop
1/2(half) x Red Capsicum - chop into cubes
Equal amount with the capsicum x Eggplant chop into cubes
1 small x Zucchini chop into cubes
5(handful) x Mushrooms - slice
A bunch of parsley (to taste) - chop depending on how you like it, rough or fine
A handful x basil (to taste) - roughly

1  can of diced tomatoes (you may need to include more depending on how much the above you use)
2 big table spoons of tomato paste
A big splash of balsamic vinegar (to taste basically)
Olive Oil
Water
Parmesan cheese
salt & pepper
Your favourite kind of pasta, about 2 serves

Method:
  1. Chop all your vegetables, red capsicum, eggplant, zucchini, mushrooms and place into a bowl and keep them together and put aside
  2. Then chop your onion. 
  3. Heat your saucepan and once hot put a tablespoon of olive oil
  4. Put another saucepan on the stove and fill it with water to cook your pasta
  5. Place onion in saucepan and stir, keep stirring until they become soft.
  6. Then place all your vegetables in the saucepan and stirring them until they become soft, what I like to do is add some water and cover them with a lid and let them sit for 5-10 minutes. 
  7. By this time the water should have boiled, and it should be time to put the pasta into the water.
  8. Once the vegetables have softened put in your can of tomatoes, and the tomato paste, stir for about 5mins, include salt and pepper.
  9. After a few minutes add in the balsamic vinegar, I more than likely used far more than what I said above, just add it to taste.  Continue stirring.
  10. After about another 10minutes of the vegetables being in the saucepan, add in the basil and parsley, just as you are ready to serve.
  11. Drain pasta, and place a serve of the sauce on top, and extra herbs if you like them (I for one LOVE parsley) and some Parmesan cheese, and extra salt and pepper if needed
  12. ENJOY!!
This should serve about 2-3 people.

A preview of what's to come

Since I'm in the mood for updating, here's a preview of some of the upcoming recipes I'll be posting.  If there is any particular recipe you'd like me to post, please just let me know in the comments or comment on my instagram or even if you have me on Facebook or in person and I'll try my best to put it on my blog! 

I'll be showcasing some of my previous baking works as well (I'm still learning with making cakes but I do try!)

These are some of my faves, they are so simple and majority of the time I usually just cook whatever is in the fridge! As you can probably tell I always have red capsicum in my fridge (I love it).

Welcome!

Hey guys, welcome to my new cooking/baking blog!! I've had quite a few friends of mine, and some family members comment on my food that I make because they've seen pics i've posted to facebook and instagram. So I decided to make a blog so I can post all of my recipes you guys have taken an interest in.

I'll also post some of my tips and simple tricks when it comes to cooking, as I usually cook with the same vegies and just mix it up a bit. Simple, quick and easy! I also play around with a lot of recipes from books and online and add my own twist to them, adding some things and minus another. Plus as always I make up my own simple things.
Once you know how to cook (it's all very simple) you can make your own and have fun with food. I enjoy cooking and baking and for now it's just a hobby and something I enjoy to do with my spare time, and when my family ask me to make desserts for parties and whatnot.
We'll see where it leads me, if it ever does.
